We have done this by breaking down the wines into different categories that are both recognisable in themselves and yet fit with certain spice blends.
There is of course no definitive answer and no universal accepted solution as to which wine is best suited to which dish as so much rests on a particular individual's palate and preference.
We are happy to offer our recommendations based on our research whilst still acknowledge that the fun is to be had through personal experimentation.
